The original structure that stood before The Saxony condominiums was the historic L.A. Frey & Sons Meat Packing Plant, which became part of the cultural and architectural legacy of New Orleans. In the mid-nineteenth century, Andreas Frey smoked and sold sausages in the French Quarter door-to-door, eventually expanding into a stall at the French Market and, later, a family business with a meat-packaging facility in Bywater.
